christmassy cupcakes

i made these chocolate-mint cupcakes with mint icing and chocolate ganache yesterday, and bean reports that they are reminiscent of one of our family's traditional christmas cookies, a chocolate-mint bar. i ran out of soy milk and made these with rice milk, which worked just fine, but i think the cake is a little more crumbly, less moist. still delicious, though, and they taste like christmas.
