vegan blueberry buckle

bean made the post-punk kitchen's blueberry buckle recipe last night, and it came out amazingly delicious. it's a thin layer of cake covered with blueberries and a crumbly layer on top.














boo
is not a huge fan of blueberries, but he and crazy girl ate three pieces each while they watched corpse bride. they liked the movie, but they thought it was very sad.















meanwhile, in the dining room, m, bean and i were polishing off the rest of the cake.

of course you can! i can just see you in your brand new kitchen in your brand new house, domestically whipping up a little blueberry buckle... follow the link in my post for the complete recipe. my advice is that when it seems ALMOST done, it's actually done. i've been known to overcook it a little bit, waiting for the middle to be firmer, which results in it coming out a little dry (but actually still pretty scrumptious).
