one thing to do with tortillas

specially for j:

tortilla and tomato soup

1 tbs olive oil
1 large finely chopped onion
2 cloves garlic, minced
1 32oz can chopped fire-roasted tomatoes
3 6-inch corn tortillas, cut into quarters
3 tbs chopped cilantro
1 tsp hot sauce, optional

heat oil over medium heat. add onion, saute 7 mins, add garlic and saute 1 minute more. add tomatoes, 2 cups water, and tortillas. bring to a boil, reduce heat to medium low. cover and simmer 15 minutes, or until tortillas have broken into tiny pieces. stir in cilantro and hot sauce, season with salt and pepper.

the vegetarian times recipe adds a swirl of goat cheese at the end -- i might use vegan sour cream!

i have no idea if this is a good recipe or not (seems like it doesn't simmer all that long, which sometimes means a bland soup), but it's worth a try.
